Starting with Juyondai — pioneer of the owner-brewer movement — we curate from Jikon, Aramasa, Hiroki, and other labels leading the modern sake scene. Through direct relationships with breweries, we offer glasses you can find nowhere else.
To preserve peak freshness, all sake is stored at -5°C in dedicated refrigerators. We track opening dates bottle by bottle, maintaining strict freshness rotation. Served in wine glasses to fully express delicate aromas and flavors.
Torichou Betsujou

Kamonishiki Brewery, renowned for their Nifuda-shu series. Meeting their young master brewer Yuichi Tanaka fundamentally changed how Torichou approaches sake.
Nifuda-shu has no specialty retailers in Niigata Prefecture — even locals rarely get to taste it. Through our trusted relationship with the brewery, we are proud to offer it at Nerima Torichou Niigata.
Furthermore, we collaborated with Kamonishiki Brewery to create our exclusive Junmai Daiginjo, 'Torichou Betsujou.' Polished to 50%, crafted to complement our jidori cuisine.

Lemon Sour


Pesticide-free lemons from 'Ponpokoland' on Iwagi Island in the Seto Inland Sea, harvested to order. No wax, no preservatives — our lemon sour is born from squeezing these island lemons whole, skin and all.
In winter, tree-ripened lemons with deepened sweetness. In autumn, green limes. Seasonal citrus gives each glass a different expression.
